How to reheat whole smoked turkeys and hams

Okay, so I smoked a couple of hams, and a couple of turkeys for some friend’s Easter parties this weekend. As I had to cook them 36 hours in advance, I thought it might be a good idea to offer some tips on how to reheat these beauties, while still keeping them nice and moist.

Here’s how I do it…

How to Reheat a Whole Smoked Turkey

First of all, I always start with a brined turkey. For instructions on brining a turkey, visit my blog.

Preheat oven to 325 degrees. Place your turkey in a roasting pan with about 1 Cup of low sodium chicken broth or apple juice. Brush a little olive over the skin to keep it pretty. Then, cover it tightly with aluminum foil and stick it in the oven.

For a small turkey, 12-14lbs, you need to give it about 1 1/2 to 2 hours, a large one needs 2 to 2 1/2 hours to heat.

Bake for approximately 60 minutes, baste with pan juices, recover with foil and bake for an additional 30-45 minutes or until the internal temperature reaches 150F. Internal temperature only needs to get to about 150 degrees, since it’s already cooked. Carve and enjoy!

Once you’ve reheated the turkey, I’d advise carving all of the remaining meat off the bone and storing in air-tight containers, or freezing immediately.

How to Reheat a Ham

The goal is to reheat the ham without drying it out. The best way to do this is to place the ham on a rack in a roasting pan. Add water to the bottom of the pan and cover the whole thing tightly with foil, cut side down. Bake at 325 degrees F for 16-20 minutes per pound, until a meat thermometer registers 135 degrees F.

Unwrap the ham and apply the glaze; increase the heat to 400 degrees F and bake for 15-20 minutes longer until the glaze is burnished. Remove from oven and let sit for 10 minutes before serving.

If you really want to go “next level” carefully brush a little glaze between each layer of the spiral cut (but not the outside of the ham) before wrapping it up.

It’s a lot of work, but it makes a HUGE difference!

Slow Cooker Method for Reheating Ham

First, make sure that the ham will fit into your slow cooker. If so, put it in cut-side down, and top with the glaze ingredients. You can also just add some apple juice, cider, or chicken broth, about 1 cup will do.

Cover and cook on low for 5-8 hours, until ham is heated through.

If you want to glaze the ham, move it from the crock-pot to a broiler pan and cover with glaze; place oven rack at lowest position, and broil for 10-15 minutes, watching carefully, until glaze is browned.

My favorite glaze:
2 cups pineapple tidbits, drained
2 cups sliced peaches (in heavy syrup) drained
1 cup light brown sugar
1 Tbs Stubbs Mesquite Liquid Smoke
1 package ham glaze seasonings (that come with ham)

Combine pineapple and peaches in food processor and puree until smooth. Pour into a small saucepan and add remaining ingredients.

Bring to a low simmer and reduce by half, stirring often.

Cooking with a crock pot saves not only time but makes the best and juiciest chicken you can find. Most families love chicken, so choosing whole chicken crock pot recipes is a no-brainer, and they’re easy to find online too.

Many times, baking a whole chicken runs the risk of over cooking and dry meat. No one likes that, so why risk it? Slow cook your meals year round and don’t sacrifice taste or convenience.

Finding slow cooker recipes is great, but did you know that you can cook a whole chicken without a recipe? Sure can. All you do is put the bird in your slow cooker with about a cup or so of water, your favorite seasonings and veggies and let it cook for eight hours. If you need to cook it for ten hours, that’s ok too. Your poultry will be perfect as is, or for shredding and using in casseroles, chicken chili or bbq sandwiches.

Here are a couple of delicious whole chicken crock pot recipes to try as well:

Easy Crock Pot Chicken

1 small onion, sliced
4 cloves of garlic, minced
3/4 cup soy sauce
1/2 cup vinegar
1 – 2-3 lb. whole chicken

In a small bowl combine the onion, garlic, soy sauce and vinegar and mix all together. Place chicken in slow cooker and pour mixture over chicken. Cook on low for 8 to 10 hours.

Spicy Slow Cooked Chicken

1 (3 to 3-1/2 lb.) whole chicken
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon olive oil
1 large onion, sliced
1 medium garlic bulb

Rinse chicken; pat dry inside and out with paper towels. In a small bowl, mix salt, paprika, pepper, and oil; mix to form paste. Spread evenly over chicken. Place onion in your slow cooker. Place chicken, breast side up, over onion. Separate garlic into cloves, but don’t peel cloves. Arrange garlic cloves around chicken. Cover slow cooker and cook on low 8 to 10 hours.

The Popularity of Loose Leaf Tea and Whole Leaf Tea

Herbal tea has been a popular beverage in many cultures for thousands of years. The Ancient Asian peoples harvested loose leaf tea and whole leaf tea from many of the native plants found on that continent, as they continue to do today. The popularity of loose leaf tea and whole leaf tea has been adopted by modern cultures throughout the world.

The plants that have traditionally been used for loose leaf tea and whole leaf tea still come from China, Japan, India, Pakistan, and other parts of Asia. Yet there are other countries that are able to produce a substantial supply of these kinds of tea, due mainly to a similarity in climate and soil. Many parts of Indonesia and South America have climates that are equally conducive to the production of high quality herbal teas.

The yerba plant of Brazil in particular is very adaptable to loose leaf tea and whole leaf tea. The beneficial qualities of teas used by these different cultures are associated with the natural forces that are so often personified as deities and other entities in mythology and folklore.

The modern interest in loose leaf tea and whole leaf tea may be more practical in nature. The increased awareness of the healthy attributes of botanicals in general has included an understanding of the benefits of beverages derived from plants and herbs as part of a daily dietary regimen. The presence of high levels of polyphenols, antioxidants, vitamins, and minerals in herbal teas of all kinds has led to a larger consumption of leaf tea by the general public in all parts of the world.

The hibiscus plant, for instance, has been found to have a positive effect on the reduction of cholesterol, and its ability to help regulate blood pressure has been well-documented. Green teas of all kinds – such as oolong, long jing, and the so-called “gunpowder” varieties – contain high levels of antioxidants and vitamins that have been verified to be highly beneficial to the regeneration of cells and tissue in the human body, as well as in preventing disease in general.

There are also other ways to manufacture loose leaf tea and whole leaf tea for consumption. One very popular type is based on a method used for centuries in east India and Pakistan, known as Ayurveda. This process combines several botanical elements to produce a very beneficial brew that achieves many health benefits at the same time. Rose leaves, licorice root, cinnamon, cardamom, ginger, and coriander are some of the ingredients in a typical Ayurvedica blend, and the way in which they are combined results in flavorful, aromatic tea that contains a great deal of vitamins, minerals, and other elements that are very supportive of optimal health.

How to Use a Whole House Iron Filter Cartridge to Treat Rusty Residential Well Water

Iron is one of the most common elements in the Earth’s crust, so it is no surprise it finds it way into many home well waters. The maximum contaminant level (MCL) for iron set by the United States Environmental Protection Agency is 0.3 ppm. This can also be expressed as 0.3 milligrams per liter of water. In concentrations above 0.3 ppm, iron in water can cause staining of fixtures and porcelain, ruin laundry, and make the water taste terrible.


Manganese is often found with iron in well water. A bittersweet astringent taste is detectable at concentrations above 0.5 ppm by many people. Manganese causes brown, black and/or tea-color staining, and can impart an asphalt-like or oily taste, above .05 ppm. Some of the same filters used for iron, are used for manganese removal.


If the right sets of conditions are present, a whole house iron filter cartridge can be used in place of the standard backwashing iron filters. These iron filter cartridges cost less than a standard iron filter, but may cost more over a period of a few years, because the cartridges need to be changed frequently. Since they do not require backwashing, they are often used in situations where there is a shortage of well water. They are easier to install than backwashing iron filters and do not require electricity to operate.


Iron and manganese are often found in a dissolved state in well waters, and so your well water may appear clear when first drawn. Upon exposure to air, or after the addition of oxidants (such as air, chlorine bleach or ozone), this clear ferrous iron is oxidized (rusted) to the ferric state to form insoluble particles. A properly designed whole house iron filter will remove both types of iron.


After oxidation or exposure to air, the water then looks orange or yellow. If manganese is present, the water may turn brown or black. This can happen in toilet flush tanks and in the washing machine or dishwasher.


Iron is usually treated with automatic backwashing (self-cleaning) iron filters, which can remove both dissolved and oxidized iron compounds. If sulfur odor is present along with iron, typically chlorine or ozone is fed ahead of an iron filter. In some cases, a backwashing self-cleaning sediment filter can be used in place of an iron filter, if all the iron and manganese has been oxidized to a solid state after the chlorination, ozone injection or air injection process.


There are several different types of backwashing iron filters used, depending on the type and quantity of iron, and the application. Some iron filters, such as the greensand, pyrolox, and Birm filters use a type of manganese oxide media where oxidation takes place right on the filter media as the water passes through it.


Some iron filters use air injection. Often these systems are used after the water has been pretreated with aeration, chlorine or ozone. Birm iron filters work great for iron, but work less well on manganese, and cannot be used where the water contains sulfur odors, chlorine or low pH.


The role of pH is very important in iron treatment. Generally, if the pH of the water is acidic (or less than 7.0), it must be corrected with a special type of neutralizer filter ahead of the iron filtration system. It is usually best to test for pH right at the water source, and not depend on laboratory analysis for pH, since in some cases the pH can raise after sampling, giving false results.


Water softening is sometimes used to remove dissolved iron in low levels (less than 2.0 ppm) although more commonly, we use iron filters in conjunction with water softening if the water is both hard, and high in iron or manganese. Iron is generally not thought of as toxic, although there are some studies that show liver toxicity to men.


A whole house iron filter cartridge contains the same media found in backwashing iron filters (such as Birm, greensand, pyrolox etc). Instead of backwashing and being regnerated, and used over many years, the cartridge is used for a few months and disposed of.


These cartridges work best when the iron in the water is less than 3.0 ppm and the flow rate is less than 10 gallons per minute. For best results, the water should be chlorinated or aerated prior to the whole house filter. If the water comes from a storage tank or cistern then no further aeration is required. While the filters do remove low levels of hydrogen sulfide gas (rotten egg odor) generally it is not a good idea to use these cartridges filters if sulfur odor is present.


While whole house iron filter cartridges are a good choice for many on low flow applications such as summer homes, cottages or mobile homes, they do not replace a well-designed backwashing iron filter. Over a five year period for instance, a backwashing iron filter, which may cost 0 up front, will usually cost less than purchasing a replacement iron filter cartridge every few months for to 0.

The first of the easy dinner ideas is an old classic, barbecue chicken. It will take less than an hour to make and can feed a large family cheaply. The trick to cooking barbecue chicken is to make sure the outside does not burn while the inside is cooking through. To make sure this is accomplished, put the barbecue coating on after the chicken is cooked thoroughly and let it heat until warm.

To prepare this, preheat the oven to 300 degrees. While you are waiting for the oven to heat, take out a baking dish and add about a teaspoon of oil. You can use olive oil for a healthier option. Add your chicken pieces to the pan and coat with salt and pepper. Put the chicken in the heated oven and cook until white inside and heated to 180 degrees by meat thermometer. Mix one 16 ounce can of orange soda and 16 ounces of barbecue sauce together and coat chicken. Put back into the oven for about ten to fifteen minutes. Remove and enjoy. Add a Side salad and a baked potato or potato salad made with low fat mayonnaise and you have one of the most perfect easy dinner ideas.

One of the kids favorites as well as good eating for adults is tater tot casserole. It is super simple to create and only takes less than an hour from start to finish. It is great because it only requires the use of two pans. A pound or two of ground met such as beef, turkey, chicken, or pork needs to be cooked and browned. While this is cooking, preheat the oven to 350 degrees. Take out a large baking dish and begin to cover the bottom with frozen tater tots. Drain the cooked ground meat and begin to add a layer over the tater tots.

If you like onions, you can also cut these and layer them on top of the meat. Add a layer of shredded cheese of your choice. Cover all this with cream of mushroom or cream of chicken soup. Continue layering the ingredients until you reach the top. Add a final layer of cheese and cover with foil. Put into the oven until the casserole is heated through. Take off the foil and let sit in the oven for a minute to make it brown. Serve each person and enjoy. It goes great with a fresh salad and a nice large glass of milk.
