If you’ve come across any of my pieces, you’ll know both my mama and grandma were the best chefs. Grandma’s house is just three hours driving distance from our home and we’d drop by her house a lot. She knew what we liked and she would cook it for us whenever we were at her house for gatherings. She called it City Chicken and I am going to share the recipe with you because it deserves to be shared and enjoyed.

All the time, we had City Chicken at lunch every Sunday. We would wake up on Sunday morning to the most delicious aromas of love cooking in the kitchen. Preparing this most special meal was my grandmother’s way of expressing her love for us. Grandma’s recipe was always extra special because she always made City Chicken just for us! As we played in the yard, climbing trees with all the cousins and family members, she would be in the kitchen preparing to feed a family of anticipating, hungry people.

As soon as Granny bellowed from the kitchen door that our meal is served, my cousins and I would run off to the dining area at once. Everybody knew how delicious the food that grandma prepared was and that made the gathering all worthwhile besides the discussions and camaraderie. All the food was placed on a metal table that looked old enough to be from the 1950′s or 60′s. We had our favorite City Chicken and the rest were macaroni and cheese, little new potatoes and snow peas in a cream sauce, homemade bread, salad and mashed potatoes. Above all, it was quality time for the family. Even if we ate on dishes that didn’t complement our spoons, forks and even our glasses (the blue one’s my favorite), or the cloth on the table was already discolored, the important thing was we were having fun as a family. All that mattered was the love of the family enjoyed with appetizing treats and great laughs.

Every ounce of energy and heart poured into cooking this City Chicken recipe is invaluable! Equal amounts of beef, pork and veal were cut into cubes and alternately skewered onto wooden skewers. Each spear of meat was added with salt and pepper to taste, doused into a batter of egg and milk, coated with crackers that were finely crushed, and fried until the color turns slightly brown. When all the meat skewers had been fried, everything were heaped up into a roaster with cover and placed inside the oven and cooked until the meat was well done, that the meat detaches from the skewers. Later, my grandmother started using an electric roaster oven with equally delicious results. You should try her macaroni and cheese. I know now that it wasn’t the healthiest dish on the table, but next to the City Chicken the best! She made her macaroni and cheese with cream, something called hoop cheese (had to be this kind of cheese or it just didn’t taste right), a little bacon grease, all mixed together and then topped with more cheese. The crusty edges that looked slightly brown was certainly my most liked part of the dish!

Even if the preparations take many hours, however it is cooked, in a conventional way or modern way, the outcomes are no different, always. With my Grandma’s recipe however, it was different because she added a little something to it. Grandma’s cooking was her masterpiece, only she knows how to create it with the generosity of her heart. Grandma had plenty of it.

This kitchen appliance will save time, it’s easy to clean and versatile. The basic setting are part of all unites, however, there are units with more sophisticated functions, and the cost of a crock will depend on its size and functions available on that unit.

One of the things to look for in a crock pot is a removable stoneware liner. This enable ease of cleaning the equipment. Just wash and replace. Very easy. The next consideration is shape and size. The Good, the bad and the ugly…
Well slow cooking is a treasured past time of mine, while I’m at work I daydream about the delicious meal I will be partaking in later that evening. My husband and I work an 8 hour work day and it so comforting knowing that this slow cooker is home waiting to cater to our every need…I wish. The PROs of this slow cooker is that is large, easy to clean and use. The meat thermometer is the icing on the cake for this one. Sometimes you don’t really feel confident that your pot roast is fully cooked but this takes the guesswork out of it. You can see digitally that your meal has reached the appropriate temperature. The CONs the slow cooker is a little large for a single person but if you over look and look at the value you receive in creating healthy, home cooked meals that you can store. It really makes up for it. Think about it if you spent a day on buying take out; you can feed yourself for like 3 days at that same price with this slow cooker. It’s a tad heavy also at 14.3 pounds if you’re a tailgater or potlucker but who doesn’t want strong biceps, right.
