Crappie filets (6 or 7)
Potato chips (half of a bag)
Cheese shredded (2 cups)
Onion
Salt to season
Pepper to season

Wash the fish and place them in a casserole dish. Salt and pepper to season.
Pour the Italian salad dressing over the filets in the dish. Then cut up the onion and lay over the top of the fish and salad dressing. Crunch up some potato chips and sprinkle over the fish covering the entire mix.

Cover the dish and bake at 400 degrees for thirty minutes. Take the dish out of the oven and place a layer of the shredded cheese over the mix. Place the dish back in the oven, bake until the cheese is bubbling, and melted.

Crispy Crappies

Crispy crappies are very tasty. You will enjoy the deep fried fish on any night of the week. It is very easy to mix together and fry in a pan or deep fryer.

Crappie filets (2 pound)
Garlic salt (2 tsp)
Onion powder (1 tsp)
Crushed butter crackers (2 cups)
Egg (1)
Beer (1/2 cup) any flavor
Cooking oil

In a small bowl, mix onion and garlic together. Place crappie filets on a piece of wax paper. Sprinkle half a teaspoon of garlic and onion mix over filets.
Place the crushed crackers in a bowl and add the remaining garlic and onion mix.

Place about a inch of oil in a fry pan. Heat this to about 375 degrees or use a deep fryer at 375 degrees.

In another bowl, beat the egg and beer together. Dip each filet into the egg mix and then in the cracker mix. Make sure to coat entire filet. Drop in the fry pan or deep fryer and fry for about four minutes or until golden on both sides.

Try this low fat version of fish and chips, for a healthier alternative to this classic family meal.

Serves 4

Ingredients:

4 fillets of skinless cod or other white fish
4 slices of bread, or ready bought breadcrumbs
4 tablespoons of parsley
Salt and pepper
1 cup of flour – in a bowl
3 Eggs – in a bowl, and beaten
Lemon wedges

Take the slices of bread and pulse in a food processor until fine, uniform crumbs form, and place in a bowl. Alternatively, place the ready bought breadcrumbs in a bowl.

Mix the parsley into the breadcrumbs, and add salt and pepper for seasoning.
Dust each piece of fish with the flour, then dip into the egg, and roll in the breadcrumbs until all of the fish is covered.
Place on a baking dish and bake in the oven at 210°C for 15-20 minutes.
Serve with peas, potato chips and lemon wedges.
