The word “curry” is derived from the Tamil word kari which means ‘sauce,’ which is usually means vegetables/meat cooked with spices with or without a gravy. Other school of thought says it has been derived from a Sanskrit word “Kari” which means “to prepare”. Curry is the word used to describe anything cooked with gravy and is analogous to the soup or stew. Curry can be made with any ingredients but mostly has three spices present which are turmeric, coriander and cumin. There are a variety of other spices in a curry depending on the food being cooked and the geographic region from where the curry belongs.

Curry is also used as a generic description used in the Western culture to describe a variety of dishes from Asian cuisines whether it be from India, Bangladesh, Sri Lanka , Pakistan, Thai or other South and South east Asian country.

Chicken Curry is a common Indian dish which is popular all over the world. A curry has chicken in a sauce containing basic ingredients onion, yogurt and tomato this is then flavored with numerous species like ginger, chillies, cinnamon, garlic, cardamom to name a few. Chicken curry can also be prepared with market bought curry powder. One can even use curd and milk to reduce the spiciness. This will also add a little bit of sourness in the curry too.

India has a diverse variety of recipes for chicken curry just the way as it has diverse languages, culture, climate and regions. In the past, India has been ruled by many invaders and each rule provided India with its culture and food habits like mughlai dishes have milk and cream in them. Every major region has its own unique chicken curry recipes with slight variations to popular recipes

The spices used in Indian chicken curry recipes have not only the taste value but they also smell so good and also have the great health benefits. Some studies have shown that spices in the curry may help to prevent some diseases including colon cancer and even Alzheimer’s disease. Some studies concluded that the reaction of pain receptors to the hotter ingredients in curries leads to the body’s release of endorphins.
Readymade chicken curry masalas are available in India as well as in foreign countries. Masala refers to combination of spices in the right proportion. Curry powders or pastes produced and consumed in India are extremely diverse; some are red, some are yellow, some are brown; some with five spices and some are with as many as 20 spices or even more. These masala contain turmeric, often coriander, cumin, mustard, chili, fenugreek, black pepper and salt. Besides these spices, other commonly found spices in different chicken curry recipe powders in India are allspice, white pepper, ground mustard, ground ginger, cinnamon, roasted cumin, cloves, nutmeg, mace, green cardamom seeds or black cardamom, bay leaves and coriander seeds.
Not only Indian recipes for chicken are consumed but Pakistani, Chinese, Japanese, Thai and other south Asian countries chicken curry recipes are also quite popular. Depending on the region, the chicken curry can be cooked in ghee (butter), ground nut oil, coconut oil, sunflower oil and many others. The chicken curry can be consumed with rice or can be eaten with chapatis or rotis or bread or can be prepared with rice known as Biryani.

INGREDIENTS TO MAKE VEGETABLE CURRY

*2 large onions, finely chopped

*2 tblsp. oil

*1 tsp. cumin seeds

*1 tsp. mustard seeds (the black kind, if possible)

*8 medium potatoes, quartered

*1 and 1/2 tsp. fresh ginger, crushed

*1 large garlic clove, minced and crushed

*1 tblsp. ground cumin

*1 tblsp. whole coriander, crushed

*2 chili peppers or 1 tsp. cayenne pepper

*1/2 tsp. turmeric

*1 tsp. salt

*4 cinnamon sticks

*6 cloves

*4 oz. tomato paste

*1/2 lb. green beans

*1/2 of a small Cauliflower

*1 medium Eggplant

*1/2 lb. fresh green peas, shelled, or 1 small package of frozen green peas

1. bunch of fresh leafy greens (kale, spinach, collards, etc.), or 1 small package of frozen greens

*1/2 cup dry Chickpeas, cooked (optional)

DIRECTIONS TO MAKE VEGETABLE CURRY

Pre-heat oven to 350 degrees. In a large, heavy skillet or pot, brown the onions in moderately hot oil along with the cumin seeds and mustard seeds. Add the Potato pieces (peeling is optional), and stir to coat each piece with the spices.

Now add the remaining spices and continue to stir for several minutes. Thin the tomato paste with about 2/3 cup of water. Stir into the pot.

Add vegetables, one at a time, cooking for a minute or so between each addition, and put in the cooked Chickpeas last.
If your pot is not oven proof, transfer mixture to one that is. Cover with a lid or seal with foil and bake for about 45 minutes, checking after the first 20 minutes.

The consistency should be rather thick, but add liquid if necessary to prevent burning. Stir occasionally to prevent sticking. Serve over rice or with Indian bread.

Kenyan vegetarian Curry recipe is often simplicity itself: It focuses on bringing out the purest natural flavors of the ingredient itself without a lot of handling. Ingredients for the Indian Rice Curry Recipe

2 tsp. of olive oil
1 small onion, properly minced
1/4 cup tart apples, finely chopped
2 tsp. of curry powder
1/8 tsp. of cayenne pepper
4 cups evenly cooked white or brown rice
2 cups of canned chickpeas, properly drained
1 Tbs. of fresh lemon juice

Some fresh ground pepper

To start with the preparation of this dish, take oil in a heavy skillet and keep it over medium heat. When the oil is properly heated add the onion and saut� for 3 minutes. After this add the apple and saut for 3 more minutes. Further add the curry powder and cayenne to coat the apple and onion. Add the cooked rice and chickpeas to this mixture and cook through until rice and beans are hot. Once the dish is ready sprinkle with lemon juice and serve hot to be cherished by your entire family.

Another of the simplest of the authentic Indian recipes is the Indian vegetable curry recipe which can be cooked in the crock pot or slow cooker. This takes around 7 hours for preparation and can be enjoyed by the entire family. Lets start with the ingredients which are easily available.

Ingredients for Indian Vegetable Curry Recipe

3 potatoes, finely chopped

1 cauliflower, also finely chopped

1 1/2 of cups green peas

3 tomatoes, also finely chopped

3/4 tsp of turmeric powder

1/2 tsp of chili powder

1 1/2 tsp of cumin

1 tsp of curry

1 cup of water

PREPARATION:
The preparation of the Indian vegetable curry recipe is fairly easy. What you need to do is to place all ingredients in a crock pot or slow cooker. Cook on low temperature for 5 to 6 hours. When the food is evenly cooked serve hot. You can even garnish it with finely chopped salad.

Do you want to know how to make easy curry that is packed with wholesome flavour and goodness that’s cheap and authentic? Are you sick of paying good money for boring and tasteless curries from your local restaurants? Let me show you how to make one of the best curries!

The best curry can be a lovely meal. A curry is ideal for dinner or lunch. I have eaten many curries in my life. Unfortunately I have eaten a lot of horrible curries that have been made by people who should know better! A good curry doesn’t need to be expensive. A good curry consists of fresh recipes, herbs, and spices. The best thing of all is that you will be eating a homemade curry that is easy to make and is filled with healthy herbs and spices.

You will be very disappointed if you are searching to buy curries at the local shop. The reason is because many are cooked from cheap ingredients. You can cook a better curry for less money at home. I have been so annoyed in the last few years by eating out at expensive Indian restaurants and eating below restaurant grade curries. Mind you, there are some very good places to eat curries, but they are hard to find. Always ask a local Indian person where they eat because that’s the place you should go and eat.

Here’s what you need for a good curry:

1. curry leaf (10 leaves)

2. 300 grams of your favourite meat (marinate with a teaspoon of curry powder, teaspoon salt, sugar and pepper for 2 hours before cooking)

3. ginger 2cm

4. curry powder 300 grams

5. 1 teaspoon of pepper

6. 1 cup of coconut milk

7. 50 grams dried chillies

8. olive oil

9. 2 onions

10. 2 garlic cloves

11. Indian Nan bread or dinner bread rolls

Heat a fry pan with olive oil. Once it’s heated then add the garlic, onions, curry leaf and ginger and stir until golden. Add you meat and stir for 2 minutes. In a 20 litre pot, add all the ingredients and cook for 2 hours under low heat. Stir the pot every 5 minutes to help the ingredients mix and prevent the bottom of the pot from burning.

Add the coconut milk at the end and bring it to the boil. To thicken the curry please add corn flour in a small bowl and add half a cup of water. Mix this and then pour it into the pot and stir unto the curry thickens. Garnish with some fresh cream and coriander.
