Good Eats S1E13P2: The Art Of Darkness
When Alton researches the lusciousness of chocolate, he’s drawn deeper and deeper into that world, trying various recipes with help from one familiarly top-hatted purveyor of the sweets. Recipes featured in this episode: – Chocolate Mousse – Chocolate Lava Muffins

I’m so glad this is posted. I’m making this for my boyfriend for V-Day and I need all the help I can get.
and im broke… thank god for on food and cooking
because he explains the science part of it in a way we can understand
I think because he is original, good, fun and funny and isn’t a phony like almost everyone else on the Food Network. He’s the only one I can watch now
Because he speaks the language of delicious food, which is understood in every culture…
Why is Alton so fucking awesome?
1/4 pound
Maltese Muffin is a reference to the movie title “The Maltese Falcon” most of the episode titles are plays on famous titles, and many of the recipe names. I.E. The art of darkness = the Heart of Darkness, the book that Apocalypse Now is based on.
a stick of butter is a quarter of a pound, or 4 ounces
Why does he call it a ‘Maltese Muffin’? I’m Maltese and it’s definatly not maltese food!! Looks great though!
how much is in weight a stick of butter?
Yeah, having a kitchen scientist IS the best thing money can buy.
are there really Gelitian Ninjas? lol rofl
The references to Wonka make me smile: I loved the book “Charlie & the Chocolate Factory” (and the Johnny Depp movie version!)
I look forward to the day I try making the little molten cakes.
LMFAO. This^.
(1:35) Alton dissappears like a gelatnious NINJA! WHIPPING TIME IS HERE!

He said it was ugly or something, watch the episode on dried fruit, called “withering bites”
