Create a Family Heirloom Cookbook

Almost every family has a treasured recipe, handed down through generations, that is not only beloved because it’s delicious, but because it evokes memories of favorite family get-togethers.

A family heirloom recipe book is a wonderful way to combine favorite dishes and family folklore. According to Cheryl Wolf, a performance artist and graphic design instructor at The New England Institute of Art, “Family recipes are a valuable resource for a family history. I have built an entire performance around my family’s recipes and the stories they evoke! “Breaking bread” together is life-affirming. What better way to reach back and bring personal history to the present?”

Wolf adds, “A family recipe is also a family history, and can be a wonderful work of folk art.” For example, she says, take the opportunity to not only write down family recipes for generations to come, but include famous family stories (every family has them), photos and memorabilia as well.

But how to turn family culinary gems into actual recipes? Chef Peter Adams of the Illinois Institute of Art-Chicago has a few tips: “Start with a family letter, asking everyone to send back one or more of their ‘specialties’ by a particular date. Ask those who can to reply by email so you can cut and paste recipes right into your final document.”

If you have a relative who never writes down recipes (it seems like all the best recipes are never written down), but rather cooks by “a dash of this, a little bit of that,” consider having someone in your family be the “helper,” and prepare the dish along with them. Adams suggests the “helper” measure, guesstimate, and generally keep track of how the dish is prepared, including cooking times and temperatures. The “helper” should also be sure to ask about consistency, color, texture and doneness. According to Adams, “This last bit of information is always the most important part of passing along a recipe.” Once you have a written recipe, prepare it again according to the directions, and adjust the recipe as necessary to get as close as possible to the original.

When you’re asking for recipes, provide everyone with a similar format. For example, ask family members to list the ingredients to be used in order, together with the quantities. Lay out the steps that are needed in order to make the item, and always add little comments about what to look for as the dish is prepared, and when it is done. It can be a lot of work, especially with recipes that were never written down. But, says Adams, ultimately it’s worth it because you’ll be saving an important — and delicious bit of your family’s history.

Once you have the recipes, you’ll want to create a look for your cookbook that reflects your family. A simple way to do this, says Meryl Epstein of The Art Institute of Phoenix, is to include family mementos or old photos, along with the recipes. A simple way to share one-of-a-kind memorabilia is to take them to a local copy center and make color copies.

“You can use the color copies you make as background, and print a recipe over the photo, or have the recipe on one page, and a photo on the facing page. You can also create a collage using items such as blue ribbons (won for a cooking), tickets stubs or airplane tickets from a favorite trip that produced a great recipe,” says Epstein.

For text, use simple fonts like Times Roman or Arial so that they are easy to read for all ages. Save decorative fonts for recipe titles or chapter headings. Consider creating a box — with shading and borders — for the recipe itself so that there is enough contrast between the recipe and any background artwork you use.

Epstein suggests writing an introduction about the cookbook, its organization and how family responded to the project. Be sure to date the book and have a table of contents so family and friends can easily find a favorite recipe. Here are a few of her suggestions for organizing recipes:

* by category, for example, appetizers, soups, salads, entrees and desserts

* by family, for example, grandmother, aunt and uncle, or cousin recipes

* by holiday, for example, favorite dishes for the 4th of July, Thanksgiving or Labor Day

To keep recipes easy to read and clean, consider putting them in plastic sleeves (available in craft and office supply stores) and then in 3-ring binders. Says Epstein, “This way, you can add a new recipe every year.”

How to Make Delicious Chocolate Sorbet

Prep Time: 15 Minutes

Serves: 4

3 1/2 oz (100g) Walter Baker & Co.’s Premium No. 1 Chocolate chocolate broken into pieces

3 1/2 oz (100g) water

2 1/2 oz (60g) cocoa

For the Sugar Syrup

9 fl oz (250ml) water

5 oz (150g) caster sugar

A great way to serve sorbet is with a glass of coffee liqueur poured over it or drunk alongwith.

It is equally good served with Chocolate Pudding. Or fresh and perfectly ripe fruit,

or simple butter biscuits.

To prepare the sugar syrup, put the sugar and the water into a saucepan and bring to the boil without stirring,

leave to bubble for about 5 minutes or until the sugar has dissolved, then remove from the heat

While the sugar syrup is bubbling, melt the chocolate in a heatproof bowl suspended over a saucepan of barley

simmering water. Once it has melted, add the, 3 1/2 oz water to the sugar syrup and reheat until warm, whisk

in the cocoa, whisking together until smooth.

Place the mixture in an ice cream maker, following the manufacturers procedures, mix until smooth

It is a good idea to cool the sorbet down before placing in the ice cream maker. To do this place over a bowl of ice water

The holy month of Ramadan also has great impact on Muslim culture. In many countries, people make special arrangements to pray together and listening holy Quran being recited during these prayers. Special food is prepared to end the fast each day.

Even though Muslims fast during this month, but it also brought a wonderful diversity in the food they serve during Iftar (the meal they eat to break their fast just before evening prayer time). In Pakistan this time of day has very important cultural significance. People return home from work early to join their families on Iftar dinner. Special Ramadan Recipes are prepared and served. These Ramadan recipes vary from one country to another. Since Muslims are spread all over the world so their local customs and local cuisines also affect their recipes and the menu of Iftar Dinner. Some ingredients such as Dates are common almost everywhere. In many countries Muslims break their fast by eating a Date to follow the way of Prophet Muhammad.

In Indian Ramadan recipes are quite similar to Pakistani Ramadan recipes. Samosa and Pakory are common in both countries. Another common Ramadan recipe is Fruit Chaat recipe, in which fruit salad is served with spices and sugar. Ramadan recipes vary from one country to another, even in a single country like Pakistan, people of different ethnic origins prepare their Ramadan recipes differently following their usual local cuisine and using more local ingredients.

The menu of an Iftar dinner could be both casual and formal. Rich and affluent people throw special Iftar parties where people get together on the Iftar Dinner. At that time many types of Ramadan Recipes are served. The centuries of this tradition has brought great variety and flavors to Ramadan Recipes. Fruits are the most common ingredient of an Iftar dinner in most Muslim countries. But there are also recipes containing beef, meat, chicken, fried and cooked, bar be cue, desserts, and some refreshing drinks.

In Pakistan people usually drink a rose flavored drink called Roh Afza. In rural parts some families serve Lassi or Yogurt Milkshake instead of rose flavored drink. If Ramadan arrives in summer then lemonades are served at Iftar dinners. Since Muslim calendar is a lunar calendar so there is no fix season for Ramadan. Therefore seasonal fruits and ingredients bring more variety to Ramadan recipes.

Iftar dinner is not just the time of the day when Muslims end their fast and then pray. It is also the time for families to sit together and wait for the call of evening prayers Azaan. In some countries like India, Pakistan and Egypt, local mosques use special sirens to announce that it is time for Iftar and then recite Azaan on loudspeakers. In some countries where mosques are not located that closely people wait to hear the announcement on TV or Radio or break their fast by looking at the time of sun down.

There is more than television as a source for these dinner cooking ideas. There’s a lot of food online. Sure cooking shows have web sites but there’s more than those. Simple meals, healthy meals, even meals cooked on car engines are featured. In fact there are thousands of online sites for ever type of food or meal subject. It would take a life time to read it all.

Easy isn’t bland. Simple meals aren’t bad tasting. Hot dogs are easy, but maybe a little boring. Then try some corn dogs. Kids love them, and they’re not hard to prepare. Some corn meal, flour, milk, salt and sugar, coat the dog, fry it. Make it more authentic by inserting a stick.

But corn dogs aren’t very healthy. Simple foods don’t have to be unhealthy foods. Broiled chicken is nice in a salad. That’s a simple meal. It’s also healthy and delicious. Try it with chicken soup. Salads can be made from almost anything. Use leftover ham, diced, some hard boiled eggs, and a pre-mixed salad from the store as a supper.

Now for some history. Back in colonial times supper and dinner were two meals. Physical work required a late afternoon meal, called dinner. Supper was the heavier meal at the end of the long, hard day. Over time dinner and supper became the same meal. However supper and dinner are still separate for some people in 2008, especially for people who perform physical work.

Separating supper from dinner isn’t necessary. But you can try lighter, traditional dinner style meals at supper time (or does your family call it dinner?) Who cares? Easy dinner recipes can make it fantastic.

In our time-crunched world, it seems like we are always rushing to get dinner on the table before the family runs off to soccer practice, swimming lessons, PTA meetings and evening classes. A great way to get dinner on the table quickly is to “cook once and eat twice”. Cooking once and eating twice is an economical and easy way to feed your family good food fast. This doesn’t mean eating leftovers everyday. Instead you will be preparing fresh food that only takes a fraction of the time, using main dishes that are put together with a few basic ingredients that are used in many different meals. Cooking once and eating twice is less work than starting from scratch every time, because the most difficult and time consuming part of putting your meal together is already done.

Cooking once and eating twice requires a little bit of planning. For example, when you are putting together a shopping list, think about several ways you could use chicken breasts. The first day, cook all of the chicken at once, seasoning it several different ways for variety. Maybe the first day you have Teriyaki Chicken with rice pilaf and green beans. Later in the week you could have Chicken Alfredo with broccoli and chicken salad sandwiches for lunch. 

Casseroles

Lasagna, enchilada casserole, meatloaf and macaroni and cheese all do well in the freezer. Simply make an extra casserole dish, wrap it tightly with foil and freeze for up to a month. To heat, pull the casserole out of the freezer in the morning and let it thaw in the refrigerator during the day. When you get home, heat the oven and put your casserole in to bake. By the time you make a salad, set the table and slice up some French bread, your hot, hearty dinner will be ready to serve.

Meat

Try boneless pork chops or roast beef, cooking twice as much as you need. Pork chops smothered with barbeque sauce makes a great sandwich to serve with coleslaw and baked beans. Roast beef can be sliced and stir-fried with a package of frozen vegetables or made into fajitas.  

Beans

Beans are easy and inexpensive. In the morning before you go to work, put a pound of dried beans on to cook in the crock pot. Just rinse them and cover them with water by about 3 inches. By the time you get home, you will have beans to use in burritos, serve with rice and salsa, mash for refried beans or use in chili. Beans also freeze well for later use.
